Well, why don't more places go the Olive Garden Endless Soup/Salad/Breadsticks route?
Have a high entrance fee ($20-40/person + drinks) and then once you sit down at the table they bring you as much food as you desire off the menu, maybe with a smaller concurrent table-plate limit so you don't simultaneously order 30 bowls of lobster bisque before you decide you're full.
