Would a twice-baked marrow bone be a feasible dish? Something like a twice-baked potato, cooking the bones then scooping out the marrow and mixing it with stuff, then packing it back into the bones for further roasting? Also, the filling would probably be starch dense or something, right? You'd need something to soak up all the grease that would be pooling out of it.
