by dirty do you mean "earthy"? They are supposed to taste like that. If they taste like out and out mud, then you may not be brushing off all the dirt before you cook them. To me mushrooms have a different flavors for different varieties, but overall they tasted almost meaty and rich if you get certain ones. I do not care for them raw, I think it is a texture issue. I do, enjoy them cooked.
