Why is it that homemade lox is never any good? I have watched numerous YouTube videos now of people making their own lox and you can tell it just isn't that good. Regular store bought or wholesale lox is fucking delicious and you can eat it straight but all these YouTubers are bullshitting around offering different variations that would make it better or w/e and you can just tell it's clearly nonsense. It tastes like shit because no one can make good homemade lox. How do the big time factories make it so good? Do they have special brining equipment? Is there a secret ingredient they use?

What's the deal with lox?
It's fully cooked, but it looks and feels raw.

Even if you exclude sushi (which I enjoy) the only good ways to prepare fish is still raw. I don't know why anyone would ever cook a fish
