Here we are after about an hour of simmering. The chicken is good and tender. Add the green onions a couple min before serving.
Taste and adjust seasoning with salt, pepper, and hot sauce.

When the gumbo has cooked for about an hour add the green onions and give it another 3-4 minutes.

Almost ready, add the green onions for the last couple minutes.

If you were making seafood gumbo then you would add the fast-cooking items like shrimp or oysters at this point, but this time it's just chicken and sausage.

Note that the boudin has melted into the gumbo and thickened it. Commonly people use Okra or file powder for that, but I prefer this method.

gumbo looks like this after simmering for roughly an hour.

If you were using seafood like shrimp or fish add it now.

Taste and adjust seasoning. I used fresh ground pepper, a little salt, and some Tabasco sauce for kick. You really don't need much in the way of spices because so much flavor comes from the veg, stock, meats, and of course the sausages contain seasoning too.
