I like your crust. And I frequently top my pizza with jalapeño and pepperoni, plus olives. Tonight I did just mushroom. Pic. Also oregano for aroma.

When to cut? Mixed bag. Some bread bases are better immediately, but others can firm up in a good way and are better to wait. Depends on your dough and crust results. I'm very impatient, and usually just cut and eat immediately. Burns and all.
