I have been enjoying all kinds of omelettes and wish to find new unexpected flavors for omelettes. Omelettes are my sunday relaxation, when nobody else is awake, I wake up at 6 am and cook myself all kinds of omelettes. I have done a lot of the classics and a plain rolled omelette is among my favorites. As is an omelette with cold smoked salmon (pic related, even tho it was overcooked, as is evident from the picture)

Do you think pesto would go well inside a rolled omelette? I do enjoy pesto a lot.

How about some patee, like liver? I am sure I could find a good one, but which one should I try?
