I haven't cooked for myself outside of the microwave in three years. I am trying to monitor my calories, and eating in restaurants and ordering in is not conducive to that.

But, I have roommates, and do not want to share food, or have leftovers, and would prefer to keep things as immediately clean as possible.

Are there any resources for cooking from the ground up to do this kind of thing? Or am I screwed?
