I had something "mexican" before but it was just like spring rolls with beef. There are Mexican restaurants don't get me wrong, but they aren't very represented and are commonly located at the $$$ districts with tourists like Clarke Quay.

Tap water clean, never had to buy bottled. Also bottled water seems kinda like a scam, just boil your own. When travelling I always appreciate hotels with electric kettles.
