There's your fucking issue. It's not releasing from the pan, it's just gluing itself. Get the damned oil hot and stop fucking with it until it releases.

The hell are you doing? Stop picking at the food before it releases from the pan. Browning makes it do that on its own.

My first attempt at green curry.

I didn't know what to use for veggies, so I just cleaned out my fridge: onion, celery, and bell pepper went in. I used a pre-made curry paste and got "coconut milk" to mix into it as per the recipe.


I tried to undershoot the veggies, but I threw them into the main pot of sauce before I got the flavors right "to GET the flavors right" and wound up simmering them for ages.

I used too much paste along with my own garlic and spices.

I needed a good neutral flavor for the copious spices, so I dumped my whole can of "coconut milk" in there.

I keep saying "coconut milk." This is because though that is clearly what the can said, it also explained in tiny broken english on the back that it was sweetened condensed coconut milk. It was halfway between milk and caramel.


By the end, no one could finish a bowl of it-- it was sweet garlic mush with the occasional shrimp on rice. Absolute waste of time and money..
