>good ice cream doesn't use stabilizers
>good ice cream uses only fresh milk and cream for the dairy
The ice cream that I make with my piece of shit $30 ice cream machine (with a piece missing from the lid because I dropped it) makes ice cream with a better texture than some of the "gourmet" brands I can buy at a store, because I add milk powder, whey protein isolate and xanthan gum, whereas the companies are more interested in having a clean label than making a good product. It's ridiculous.

Also why the fuck are so many of the otherwise good ice creams so low fat? The other day I bought a supposedly super-premium vanilla ice cream that proved to be 8% fat. What the fuck? That's borderline milk. I wouldn't even eat sorbet with 8% fat. And this was vanilla, which is supposed to be in the richer end. I don't think I'd ever make an ice cream with less than 15% fat, but preferably 20%.

The only people who think moka pots produce espresso are the common plebs that drink their coffee with cream and sugar. If you've ever actually bothered to taste the coffee produced by a moka pot versus an espresso machine, you'll know there's a big difference. Much like the difference between coffee from a French press vs. an Aeropress.
