Is this guy a fucking fraud? Every single fucking recipe in this book is such an insanely high hydration that it's almost impossible to knead and even after using a mixer for like 12 minutes instead of by hand, the doughs just flatten out after proving. How has no one called this hack out after all these years? Especially his sourdoughs, they're all like 80+ percent hydration, and at that point why fucking bother with a banneton? It can't hold its shape AT ALL.
