Carbon is lighter and is clearly more non-stick than stainless pans.


Protip for everyone ITT: stop worrying about perfectly seasoning the pan and having beautiful colored patinas or anything like that. Keep cooking and over time it becomes fairly non-stick by itself as long as you don't do something really stupid (e.g. seasoning too much and making a thick coat, washing with soap, cooking acids, etc).
