We debone and stuff trotters, though, to make sausage for New Year's Eve.

For us, it's traditional to eat lentils stewed with cured pork skin (or pork foot sausage) and stewed black cabbage.
The lentils represent coins and the cabbage bills; it's to wish fortune for the new year.
Why not eat that?

Already had our traditional NY meal: lentils with trotter sausages.
Traditionally, you eat it at midnight. The lentils are supposed to represent coins and the promise of wealth in the new year. The trotter sausage is just delicious.
Do you like lentils, moot? And sausages?
