I use yogurt as an alternative to sour cream if I don't have it. Slap that shit on a baked potato, whatever works. I've mixed raspberries, blueberries, oats, and a dash of honey for a nice desert/breakfast.

Are there hen houses anywhere near you? Even industrial ones, can't be picky for grain-fed free-range right now. You could contact the farmers/company to see the various places they sell their eggs to, and see which of those places has the best price. Eggs in bulk are MUCH cheaper than eggs in a dozen, no matter where you get them from.

With tuna, I drain it, add a bit of olive oil [if it's not already oiled], lemon pepper, and a dash of garlic powder. Makes that shit a lot more edible.

Lentils have so many possibilities, I sincerely hope you aren't allergic to them. You need to rinse lentils before cooking anyway, so perhaps that will help with whatever you're sensitive to in the skin. Just google "cheap lentil recipes," and you'll get great things to cook. Lentils cost about $1.00 for a bag where I live.
