Got some lined up for osso buco myself next week. It's finally braising season.
Don't forget to scoop out the marrow and have it on a piece of toast about halfway through the cooking process.

When I make osso buco I make sure to have some toasted bread handy for when the meat has been stewing a while. Then I scoop out the marrow and have a lovely afternoon snack.

Found two nice slices on sale recently actually. I should make osso buco again soon even though we are kind of moving out of stew season. If nothing else I'll at least have a few more pics to post in threads like this instead of having to reuse this one.

I make osso buco because shank goes on sale regularly.
If they start charging the same for a pound of shank as a they do for a pound of chuck or ribeye I'll stop buying it.
