your not having any idea what you're talking about is showing. for non-lazy parathas you're actually suppose to rub the fat into the flour just like shortbread before kneading. extra fat is sandwiched into the layers. the mistake I actually made was that I essentially over-rolled my puff pastry and lost my layers. the cheese and butter isn't "mixed in" they're suppose to sit in the layers (which I know I lost)
