i used to always mix the sauce with the spaghetti but as i got older i started liking the non-mixed way of eating them. I usually grab some of the sauce with the fork first and then the spaghetti. You get a more intense flavor this way since you grab more sauce, rather than diluting all the sauce with the spaghetti

Statements like this make it sound like you're conflating roast level (dark coffee) with brew strength (strong coffee). They're two different things. Dark roasts are beans that have been "cooked" more than light or medium roasts. This changes the flavor profile, but not the strength of the drink.

Brew strength is determined by your coffee/water ratio: 50g coffee per liter of water will be weaker than 75g coffee per liter, regardless of how light or dark the roast is.

Also, lighter roasts tend to have slightly higher caffeine content than really dark roasts.

It sounds like you enjoy coffee that is both dark and strong, which is fine.

The best way to predictably hit your desired brew strength is using a digital scale to weigh your water and your coffee beans in grams, since it's more accurate and repeatable than volumetric measurements. (Also 1 gram of water equals 1 mililiter of water. So 1kg water = 1 liter water, which makes brew strength recipes really fucking easy.)

That makes it easy to find out what your favorite brew ratio is (say 1:15 coffee:water) and really easy to brew coffee at that strength. So if you want a liter of coffee at a 1:15 ratio, you divide 1000 by 15 which gives you the amount of coffee to use. (~67g.) Or if you only want half a liter, you divide 500 by 15. This way your coffee will always be the same strength no matter how much you brew at a time, and no matter which coffee you use — since different grind settings, beans, and roasts can all have different weights at the same volume. So one "scoop" can be anywhere from say 15 to 20 grams, which will lead to unpredictable coffee strength.

Also, no matter what, you'll get more flavor by buying fresh roasted coffee, and then grinding your coffee just before brewing.

Get a timemore slim for ~$80 on aliexpress instead. https://www.aliexpress.com/i/32955636398.html..
Don't get the Slim S version because it's more money and has espresso burrs, which you don't want because the grind adjustment is too coarse for espresso, and the standard burrset is better for pourover. Or if you can a MadeByKnock Aerspeed or Aergrind grinder for within $20 of that price, one of those might be better.

The cheap ceramic-burr hand grinders like hario, porlex, javapresse, rhinowares, etc. are NOT worth the money. They might seem like a a good value, but they're not. They're unbelievably shitty. They'll produce lots of fine powder and big chunks that will simultaneously over and underextract, and they take for FUCKING EVER to grind anything. They're almost as bad as a blade grinder because they're not hugely better in terms of grind quality, but take longer to use. Worse, they'll trick you into thinking you have a coffee grinder when you actually don't. You have a coffee toy.

That said... DO NOT buy anything "better" or more expensive than a timemore slim or MBK aerspeed/aergrind unless and until you want a Kinu. (The Kinu M47, Simplicity, and Phoenix go for $344, $260, or $200 respectively. They're the best hand grinders in the world bar none.)

Because, the timemore slim and the Kinus are so good that NOTHING will be enough of an upgrade to be worth it until you get a Kinu. The Timemore Slim is probably the best value "budget" hand grinder on earth. The grinder's body and axle support is one solid piece of machined aluminum, the catch cup is machined aluminum, the burrs are machined steel, the axle and crank arm are steel, and the axle is stabilized by two bearings. It feels solid, grinds quickly, and does a pretty good job.
