Cajun food has stayed consistently awesome for so many years because theres no real way to 'americanize' it

Theres nothing you can throw into a properly made gumbo thats gonna fuck it up or make it 'quick and easy'.
The only way to make that shit without burning the whole pot and ruining it is cooking low and slow.
