I never tried this, but it looks tasty. Hope this helps. I've only ever used cabbage to add to pozole or make kimchi.

Better to use whole young chicken so you can use the carcass to make a quick and dirty chicken stock. Takes extra time but the results are night/day. Alternatively, she should have at least browned the chicken and used the resulting fond as a base for her stock.
