It kind of does. Getting the actual recommended amount of soluable fiber + displacing meat selects for and changes the gut microbiome. The recommended daily amount is 25-30g and the average US intake is only half that (15g) at best. The most consistent diets that hit those levels are almost entirely plant based since animal products have no fiber.

Meat eaters have a majority gut bacteria colony enterotype called Bacteroide while mostly plant-eaters select for a soluable-fiber munching ecosystem called Prevotella.

Bacteroide-type microbiota are associated with a host of metabolic disorders (obesity, DABETUS, some cancers, etc.) and have been observed to be changeable with diet and things like poop transplants.
