Yeah, the sugar in most recipes can be cut by 25% without affecting the texture, and it'll still be plenty sweet. I also try to look for low sugar chocolate chips, or just use a chopped up 80%+ bar.

Your cookies look like they have too much flour though. Trying to guess with baking usually doesn't work since it's not like regular cooking where you can taste as you go more often. It helps if you have a scale too.

Just follow this recipe except do 1/2 cup + 1 tbsp of white/brown sugar instead of 3/4 cup each, and look for chocolate chips with the lowest amount of sugar or chop up a high percentage cacao bar and they won't be super sweet.

I just take 25% of the sugar out of almost all recipes. Myself and others have noticed that using the full amount of sugar is just too much, it irritates your throat and makes you cough. Inb4 dry cookies, my cookies just suck, etc. I've even noticed random people coughing after eating candy and they try to say it's because the candy was old or something, they don't realize that too much sugar actually irritates your throat.

Make the Tollhouse cookie recipe, but use 1 cup+2 tbsp of sugar instead of the 1.5 cups they tell you to use. They will still be sweet without being sugary. Also check to see if you can find chocolate chips with less sugar in them. Most chocolate chips have 8 or 9 grams of sugar per 15 gram serving, but some will only have 6 grams which I think is better.
