Sausage, boudin and oyster jumbo.
>trinity
>1/2 cup of flour and oil
>oysters, dozen or so
>1 lbs of both andoille and boudin
>have everything prepped
>make the roux and stir the fuck outta till it's chocolate
>dump in trinity, then garlic later
>season with shit you like
>throw in the sausages and boudin, saute a lil more
>cover with chicken stock
>let bubble for at least 2 hrs or so
>last 15 mins dump in oysters

You decide on seasonings, but salt, pepper, bay leaf, thyme and a couple of dashes of hot sauce are my go to
