i really stretch the meat. not to save money, but 'cause i think it tastes better.

like 30% beef, 70% filler.

i use:

rolled oats
eggs
carrots
onions
garlic
celery
parsley
tomato sauce

roast the hell out of the veggies first. i want them near-dehydrated, to avoid a soggy meatloaf.

toast some rolled oats in a pan until they get nicely browned. use your oats in lieu of breadcrumbs in your meatloaf recipe.

the flavor and texture is incredible. it's so good that i feel like i'm morally obligated to let the world know about it.

I think it's a real shame so many make meatloaf with breadcrumbs instead of oatmeal.

The exterior is crisp and crunchy, the interior is soft and airy. And as the oats roast, they take on this nutty and vaguely coffee-like flavor.
