Lid, baking soda, fire blanket, or fire extinguisher (preferably powder).
I've thankfully never had to deal with it "for real" but I've been through a shitload of very realistic and detailed fire drills during my many years of working in hospitals.
I understand that not everybody is an expert on firefighting, but I would expect most adults, especially the ones who have a fucking job working with a deep fryer, to know that there are some types of fire you can't throw water on (namely grease and electrical). That should be the first fucking thing your manager in a place like that taught you.
