I had it with a couple dogs last night and it was very tasty but yeah, it provided a consistent but manageable pain

The most basic recipe is your choice of hot and sweet peppers, chopped finely with seeds, and then simmered with some salt and white wine or distilled vinegar to taste. I toss a little garlic paste in, some people like to add some chopped onion but I actually don't like my hot relish to have a complex flavour profile, I just like the plain peppers and vinegar because it serves a purpose as a condiment.

One thing I would advise - after simmering it down until desired thickness, I find the vinegar loses a lot of its fresh flavour, so after the relish cools I sprinkle a little more in there to brighten it up

I like to take a selection of sweet cappies, orange and red habaneros, and some hallapainyos, dice them up and simmer with some white wine vinegar. Delishes hot relish that, at any New England pizza & grindah shop would be referred to simply as "hots"

the closes I've ever done is making my own hot relisch, because it can't be had in my country.
