I keep reading negative reviews on multiple tortilla presses and want your take on them. Do any of you have one you can recommend? Are the wood ones really better than those circular metal ones?

I had a package of stonewall jerquee (it's a vegan jerky) that not only tastes, but has the texture/chewiness/roughness of jerky.

How the hell did they do this? Could a "food scientist" pipe in? Was it the defatted soy flour?

ingredients:
Defatted soy flour, purified water, autolyzed yeast, soybean oil, soy sauce (water, wheat, soybeans, salt), and/or spices (onion powder, garlic powder, allspice, ginger, corriander, and/or cayenne), potassium sorbate (a polyunsaturated fat used to preserve freshness).

When a cook or dietitian talks about "whole grains" and then "Pasta" as separate categories, what do they mean? I know there's some dispute about the "whole wheat" label. Are they talking about oats, barley, brown rice, stuff like that? Or is "whole wheat" pasta included with the "whole grain" category?

I need to put something over high heat without a pan. From what I read I need a wire mesh, but don't have one... would a coat hanger bent into a circle shape work? Or are those stove top wire meshes made out of special material?
