when i was a kid all i ever wanted to do was go to New Orleans and have real cajun food. so my dad took me (pre-Katrina), we had a great time in the city and ate a fantastic meal there. now my dad is dead and so is the restaurant we enjoyed so much together.

Any other extreme picky eaters here?

I fucking love good food when eating out or taking the time to cook something, but I've gotten to the point where if there's nothing great to eat and I'm tight with money, I'd rather just stay hungry than shovel some mediocre food down my throat. The only reason I'll eat something bad is because I can't sleep when my stomach's bothering me.

given your age you're in a really good position as your brain is at it's peak and can absorb information like crazy while rejecting bullshit based on validity rather than emotion. you must master this to become a good cook as there is so much misinformation by try hards and fuck heads trying to mislead the masses in an attempt to stroke their own ego's because they happen to have mastered cooking an egg.

take a look at >>12593364 , absolutely zero use, just a list of shit you could have found anywhere. what you want to do is lurk here and wait for vetting of content that is actually useful and achievable at home. most (>95%) of recipes online are either plain wrong or make huge assumptions about your ability to improvise.

do as >>12593359 said and get a no frills cookbook, anything with the mark of jamie oliver or printed after 1980 is trash (i.e. the beginning of the TV cooking business). try and seek out quality ingredients where it makes sense, some fancy seasoned "gourmet" cheese is useless other than having as a sack, a quality block of unmolested parmesan is useful.

that said everything is about technique, you can have the best ingredients in the world but still fuck it if you can't use a stove. whenever you have food that you enjoy, probe whoever made it as to HOW they made it and go from there.

just remember, assume everything to be a lie. do not trust anything online unless it's vetted and for fucks sake cook what makes you happy.

We're only just now getting decent cheese substitutes after all this time but if you ask me, unless you're hitting up local family run gourmet vegan cheese shops which big surprise they're are many of, there are many choices of "cheesy" options. I will tell you though, a fuckton of daiya cheddar mixed in well with "butter" and "milk" and some finely diced onions makes a simple easy bomb ass mac and cheese.

The daiya slices are pretty much all I buy from them now. They're good but a little overpowering on sandwiches and melt well.
