Chili and cardamom and nice in a beef stew. Cumin, nutmeg, coriander, thyme, rosemary, tarragon... most of your basic spices and herbs will work for this.
Since you're obviously a bit inexperienced you should probably go carefully and slowly with all of those, and preferably add and taste for only one at a time. Don't just toss a big handful of stuff in there until you've made enough stews to have a feel for what that will do to the dish.
And after adding something you'll want to give it a few minutes to open up before you taste to see if you should add more. That goes for even basic stuff like salt as well.
And raw potatoes should probably actually be better. They won't take longer to cook than the carrots if you keep them in manageable pieces.

I prefer to keep everything in fairly large chunks but you don't have to.

I could afford steak and lobster every day if I wanted, but I make a lot of stews and braised dishes because I enjoy both making and eating them.
I guess I do also derive some sort of pleasure from a meal being cheap to make because I grew up in a household where that was taught as a necessity.
