sweat onions, chunks or thick slices, in oil or ghee
add beef or other meat like mutton (stewing cut so fairly tough) ad get some colour on that, season very well
add tomato paste and a few sprigs of thyme, crushed garlic
let the paste toast a bit but be careful of it burning
deglaze with some nice nutty brown ale, maybe two small bottles for half a kilo of meat
add some carrot, potato, parsnip in chunks of similar size to the beef once the beef has had some time to simmer

if you want a thicker sauce then coat the beef with seasoned flour or add some in with the tomato paste
for extra bonus flavour sauté some whole button mushrooms and put them in the stew near to the end
as already mentioned serve with some whole hearty bread like a nice sourdough or even a rye loaf or some boiled potatoes covered in butter and chives and such or mash them
