I buttered the inside of a baking dish, filled with onion and more butter, then put in a litre of white wine and a bit of pepper. I'm a big believer in cheap wine for cooking and this locally made 2019 (a good vintage) Sauv Blanc clocks in at a whopping four dollarydoos a bottle.
