Fuck it, general Chinese food thread

(but with more of an emphasis on Cantonese because that's what I want to try first)

I might be going to a Sichuan restaurant soon, and I would like to know if there are mild dishes I can order.
I love spicy food but I have to avoid them because they give me terrible, recurring shits.
So what mild or lightly spicy dishes should I get?
