Pretty simple. All you need is butter or clarified butter, basmati rice and saffron.

Add a good pinch of saffron to about a quarter cup of water, let it steep. Cook 2 cups of rice like pasta in lots of saltwater al dente, about 7 minutes, drain and set aside. Add about 3 tablespoons of fat to the empty pot, add the saffron water. Then put the rice on top, don't mix! Shapte the rice like a pyramid, make 7 airholes for the steam and cover. Cook on very low heat for 40 minutes, don't open. When it's done cool the bottom of the pan with running water and invert everything on a plate. Enjoy.

The lentils are pretty self explanatory. Onion, garlic, tomatoes, raisins, sugar, coriander, cook in oil until brown. Add lentils and a bit of orange peel an juice. Cook with water until done. Season. Garnish with roasted almonds and spring onions. Fresh coriander would be nice too, but I didn't have any.
