Eastern Pole here. Pretty good recomendations. If any of you Westerners will ever wander beyond Vistula, into mythical land of "Podlasie" (this is how we sell it to German tourists), I encourage you to also try kartacze (pic related), czeniaki (lithuanian mix of meat and vegetables, served in a pot) and sękacz, sometimes called bankuchen, sort of a giant, sweet, dry "pie", hard to describe, as well as mrowisko, another local dessert. I will post some examples later.
