Me and a person were discussing this earlier and never really drew a solid conclusion. What is the difference between fajitas and tacos al carbon? I argued that fajitas were fried in a cast iron griddle with veggies, tacos al carbon were grilled over an open flame. He said fajitas were either grilled or fried, it was fajitas only if the meat, toppings, and tortillas were seperate. Tacos al carbon come to you pre-rolled. He also said fajitas were sliced in strips, al carbon are sliced in chunks. Which I don't think is necessarily true.

Whats the deal here? Are they the same thing with different names?

Oh yea, I love mex and tex-mex. My favorite stuff to cook and eat. I looked at your link and it seems pretty good, the basic stuff is there. Onion, garlic, cumin, chili powder, salt, etc etc. I like also using some paprika and maybe a pinch of cocoa powder. And cayenne, thats some good shit.

For the meat I think the best taco meat is skirt steak and flank steak. AKA fajita meat. Rub it with the spices and then marinate in lime juice. Grilling it is my fave way to cook it but if you only have a pan then cook it in there with some sliced onion and bell pepper until done in the center. Sprinkle some salt and eat. Yum.

It may be a regional thing for Texas, I thought they were around in other places though. It's nothing special, its pretty much a fajita taco but the meat comes out already in the tortilla, whereas if you order fajitas the meat and stuff will be separate on a griddle for you you to assemble yourself. Anyways, if you've never had fajitas or tacos al carbon I would highly recommend them.
