make a nice mix of thyme, smoked paprika, lemon jus and zest, ancho flakes, coriander, honey, salt, and oil
rub the bugger all over and inside (like massage teh shitcunt) and make sure you get a nice layer all over, leave for two days
take it out of the fridge at least an hour before you cook
cook at 230c till the outside is nicely coloured, then at 150c till cooked through
rest 10m (covered in foil) then carve and nom

starve them first in a bucket to get all the shite out
blanch very fukken quick in salty water
cook out in a little garlic and parsley butter
serve in a salad with crisp lettuce and sage croutons and maybe some pickled mushrooms

Beef Tartare, Morbier Cheese
200g Bavette or similar
Two tablespoons harissa powder
One shallot, cut brunoise
Two tablespoons capers, minced
A sprig of rosemary, finely minced
Tablespoon coconut oil
Three egg yolks
60g morbier
Two slices scotch glass bread

Chill your beef to 0-4c, and microdice to about 2mm or so, having trimmed the fat and connective tissues
Let it reach room temp or so, and add the harissa, shallot, capers, rosemary
Take the coconut oil and mix with a little liquid beef fat and mash it into the tartare
Toast the bread slices on a grill, and melt the sliced morbier with a broiler, before cutting triangles
Place the yolks atop the flat tartare, and garnish with a few leaves of rosemary and pink salt atop the yolk

Here's some tips for a 'mean' mac and cheese
Use a mornay as the sauce, and utilise a blend of cheeses. Here is the ratio I use normally
3:3:2:1
cheddar, comte, roquefort, reblochon
Really fucking nice depth from the comte and a bigass kick from the salty blue finishing in that oily reblochon.
Rather than doing one appetiser, consider a tight menu of three starters, three mains, three deserts: topped up by a few specials to shift dead stock
Do three pizzas well and you'll outdo the majority of halfassed joints offering long lists of shite with no thought behind them
Mac and cheese is the epitome of a western comfort food, if you have spoilt shitcunts with no taste, you'll do well
ps add spinach, bacon, and/or truffle oil
