Flip food is gaining popularity. Although I doubt it will ever be as popular as Japanese and Chinese cuisine, it will get its deserved recognition in the near future
Reason why flip food isn't that widespread but other asian cuisines are is simple:
>Chinese is popular because the Chinese were among the earliest mass-diaspora asians to migrate to the US. They brought their culture, but adapted their cuisine to the American palate. Thus Chinese-American cuisine was born and is basically the most common "Chinese" food one can find in the West. Naturally, what was popular in the US was brought over to Europe too after WWII
>Japanese food is popular due to the huge cultural influence Japan had in the late 20th century which brought over food in the beginning of the 21st century
>Thai food is popular because Thailand turned into one of the most popular tourist destinations thanks to heavy promotion of the government, thus getting alot of westerners into their cuisine
>Viet food is popular for a similar reason to Chinese food. They had a large diaspora during and after the Vietnam war, so they brought their cuisine over to the West where they set up restaurants like the Chinese too
>Korean food ain't that popular but is gaining traction for the same reason as Japan

Although there's a large oversea population of Filipinos in the US and Europe, the reason why they're there is more work related than migration. Thus the majority have no plans of putting up a restaurant unlike Chinese and Viets
