if you enjoy cooking and see potential in this position (financial, career, whatever), do it. make the best of it. I don't know if you understand how valuable knowing a second language is. you are going into a situation which would allow you to learn Spanish in a year, tops. that takeaway has a monetary value, though I can't tell you what that is. regardless, you'd be making more money, helping a friend, learning to cook new food and learning a new language. I think that's an all-around winner, aside from the 60+ hour work weeks. I do not envy that and I have done my fair share of them.

I worked in a kitchen over 15 years ago, so it's been a while, but they are some of my fondest memories from working. you get to participate in a lot of shenanigans as a kitchen worker, as long as you are part of a good crew. don't underestimate the value of getting along with your coworkers. 60 hours feels a lot longer when you hate the people you're with. been there too.
