I was a cook at KFC for a couple of years a long time ago. Then, original was a bag of flour, a bag of milk/egg powder, a bag of seasoning and a box of salt. The crispy was flour and one bag of shit, but the crispy chicken was marinated in store. Before I left all chicken was switched to injected at the processing plant.

How can I make chicken less spicy? Every time I cook it, even unseasoned, it turns out hot and spicy and I can't eat it at all. What am I doing wrong?
