Why does fried rice (a very old chinese dish) use things like electric rice cookers and MSG, and it's acceptable to cook it with those
yet for things like spaghetti carbonara you must follow the recipe as it was a couple thousand or so years ago, without deviating even in the slightest, otherwise it can no longer be considered carbonara?
