You ideally want Tomatoes grown domestically in California like Bianco DiNapoli or in New Jersey such as Scafani, or those used in the industry for Pizza Making such as Stanislaus Alta Cucina, 6-In-1, etc. that come in giant #10 cans (~6 ½ lbs).
