Stick a fork with two or three tines into a wheel of cheese and try to twist or turn the fork, it wont work. Now stick an icepick into the cheese and you can twist or turn it very easily.

It works the same with knives. If you want to cut curves into something you need a straight edge, like a vegetable knife, so you can turn it easily in all directions.
