Kind of depends which variant of UC you have, UC is just a broad phenotype for a 100 different disorders.

I also have UC. After 3 years of hopping from one medication to another I was finally hospitalized and decided doctors were retarded and I would make lifestyle changes (diet and exercise) and see what happens, and then I felt better.

I went with the Specific Carbohydrate Diet. The idea is that complex carbohydrates feed the bad bacteria and the microbiome imbalance is what causes the inflammation. Monosaccharides good, disaccharides/polysaccharides bad. Stop eating sugar and grains. Fruits, vegetables, fermented things, probiotics, reculture and rebalance the microbiome, meat is good for nutrients and does not really affect the microbiome.
