fpbp, The only food I make with liquor very often is penne alla vodka (or any other pasta, just using the regular name). The idea is that the vodka, a completely flavorless mixture of water and ethanol, adds an additional solvent into which the many different flavor compounds of tomatoes can dissolve. Like I said it's debatable, but I have tried (and seen online) many demonstrations where tomato sauce is cooked with and without added vodka and the latter seems to taste more vibrant.

Other liquors are typically used for their flavors, so get a feel for what you like and experiment.
