Keeping it simple.
>2 egg yolks beaten into a paste with pecorino
>Al dente bucatini or no. 11 thick spaghettoni
>Guanciale, rendered and crispy
>toss pasta in guanciale fat, add pasta water, and melt down egg/cheese paste
