I like restaurants not just because of the quick cash but because of the social environment at work. Its basically like high school except this time I get to be cool. I can talk shit about customers, be openly racist, fuck waitresses and hostesses, and all these are acceptable behavior.

The back is nicer in that I don't have to deal with customers, and building dishes is a lot like building drinks, which is probably why I was able to adapt so quickly, and the cooks are even more raunchy than the servers. The only problem is the language barrier, especially in Miami. I speak some Spanish but with the fluency of a grade school child. I can have simple conversations but nothing in depth, I usually have to rely on physical/sexual comedy to bond with the rest of the boh.

I'm being promoted to a Sous Chef with my company and I'm drastically under qualified for the position. I have been cooking for 3 months and don't even cook at home. I've been front of the house most of my adult life. They really seem to like me though and the offer is too good to pass up.

I'll be going to another store 3 hours away for 5 weeks of training and staying in a hotel there. I want to do a good job, can /ck/ give me any good literature, websites, YouTube channels, etc that can help me to learn how to manage a kitchen?
