I weigh food and do the math for cooking throughout the week, but I'll do one meal per week where I don't. Usually a big american diner style breakfast on friday. It's important I stay fit for my job so I am very strict with myself for caloric intake, and I track protein/carbs/fat but am not incredibly strick with those. My go to meal is ground bison with rice, beets and cilantro or trimmed chicken thighs cooked on the grill with rice and vegetables. I like to do alot of roasts in my le creuset in the oven on the weekends, spatchcocked chickens, but stuff has to stay simple in order to not be massive calories per serving. Basically anything in a restaurant or cookbook gets most of it's flavor from large calorie dense fat sources (nothing wrong with fat, just higher calorie per gram) or nutrition sources that are largely wasteful for my macronutrient needs.

My wife has helped me alot too, but she'll make pies or kolaches frequently too. Those days I just hit more cardio if I can.

cut out the noodles and add protein, but otherwise good recipe. Soup is always a great pick. Go here if you're interested in doing macros at all.

you and I both know if there was a sandwich, it'd be
a. making a open faced or closed sandwich with the white bread they give you at bbq places, brisket pickles and onions (bonus points for putting some potato salad on it
b. some kind of taco

I'm with you though, never seen mayo on a brisket sandwich. Either some kind of sauce or nothing.

if you go to a HEB Central market texas bro, get the sushi there. It's better than any place I've been in the states. Ultra fresh, large cuts of fish extremely well done, and it isn't even that expensive. Me and my wife got 2 different rolls, there was enough food from 1 to feed us, and in total it was about $20.

They got bought out by Pappa's, (owners of Pappadeaux's), but it isn't their fault really. Luby's was apparently barely financially solvent and they took cost cutting measures in general to keep a Texas icon alive, which is why stuff like the mac and cheese is not the same as it once was. In any case it just slowed the inevitable because (this is my opinion) cafeteria style service was just dated in the era of Chef-As-God-Emperor and californians drowning out alot of food culture with proscuitto tacos and duck breast mole infusion mexican sushi and other bullshit. Sad, because I fucking love cafeteria style service and luby's was an incredible place to get a very decent, good meal for a good price. I started going to Texas State about 2 years ago, graduated now, but I used to get a chicken fried steak on fridays or some fish with steamed vegetables and mashed potatoes. It was one of the few places to get a really decent, healthy meals.

There's good news though, the Pappas family used their own money to save quite a few locations from bankruptcy and really wants to keep them alive.
