These eggs had been sitting in the fridge one week, but picrel was how they peeled the day I bought them. I put them in cold water but sirred them so they shell cracked a bit and some cold water could sit in the cracks before I peeled. They peeled efficiently with very little egg membrane being removed from the egg during peeling. As you can see, there are some small divots, but overall a respectable peel. The eggs were organic free range from a local farm. My week old eggs were refrigerated but they ones in picrel had not been in the fridge.
