Salt and pepper has an actual taste, and unless you're preserving the meat, don't salt or pepper it until yo know the salt and pepper will stay on the damn thing, or you know how to utilize oil as an adhesive agent

They're not difficult to hunt. They're fearless, so sometimes you can just walk up to one and grab it.
If your aim is good you can probably hunt them with a .177 air rifle, although I wouldn't personally. A .22 LR into the head should be fine, though.
What little hunting I do is with a 55-lb recurve bow. You can definitely kill a goose with one of those, and the fearlessness I mentioned earlier makes it pretty easy to get close enough.

Shotguns should go without saying.
