I’ve cooked steak so many times I just kind of know when to pull it for medium rare. Some times I cheat and use my sous vide.

There are advantages to the sous vide. Namely the ability to time your steak around your other dishes rather than having to time the side around the steak. The steak won't overcook if it's in there for two hours or three so when everything else is just about finishing up you can pop the steak out of the bath and finish it. You can control the tenderness of the meat by how long it stays in the bath. After 4 hours a strip steaks takes on the tenderness and consistency of a nice filet.

But sure if you want something done quick go ahead and knock it out in the pan. Sometimes i do, especially thinner steaks that are super quick to finish like this flat iron I cooked in a pan earlier this week.

Neither way is right or wrong, just different.
